Burrito Buffet

All the ingredients can be prepared ahead of time for a quick and easy buffet!

Ingredients:
  • 1 cup brown rice
  • Fresh lime, juiced 
  • Fresh cilantro, chopped and divided
  • 2 cups of cooked pinto beans 
  • 1/2 cup of your favorite low-sodium salsa, or tomato sauce seasoned with chili powder and cumin, to taste
  • Guacamole (make your own or mash an avocado and add some salsa) 
  • Salsa (or your favorite low-sodium salsa)
  • Cilantro
  • Big bowl of romaine lettuce or other greens
  • Whole-grain or gluten-free tortillas, one per person
  • Cooked onions and sliced peppers 

Directions:
In a medium pan, bring two cups water to boil; add brown rice and reduce heat to medium low, cooking until most of the water has evaporated. Reduce heat to low and cover, cooking without stirring, until all the water has evaporated. Add lime and cilantro and toss with a fork.

Mix pinto beans in a bowl with salsa or sauce seasoned with spices.

Arrange all ingredients to create a buffet for everyone to build a yummy burrito, taco salad or a layered salad on a plate!
